Spiced Lamb Chops

1. Preheat oven to 400°F. 2. Brush chops lightly with oil on both sides. Place in a shallow baking dish. 3. In a small bowl, mix together garlic, parsley, mint and ginger. Pat mixture on tops of chops. 4. Bake 20 minutes for medium-rare. Serve with Red Wine Mint Sauce. |

1. Heat wine in a small saucepan. Add sugar and swirl pan over heat until sugar dissolves. Place in a bowl and add vinegar. Cool slightly. 2. Blanch orange zest in boiling water for 15 seconds. Drain and add zest to sugar mixture. Stir in remaining ingredients. Let rest in refrigerator at least 1 hour before serving. |
